Atlantic bonito “en papillote”

A very rare type of fish was for sale at our fishmonger’s this past week: The Atlantic bonito which is considered tastier than common tuna fish over here, by the Atlantic and the Channel.

To bake it in the oven “en papillote” seemed to be just right for today’s lunch.

Dead easy recipe for 4 people:


  • 2 filets of 400g of bonito 
  • mixed herbs of Provence ( about a teaspoon)
  • Olive oil ( about a soup spoon)
  • some cooking salt ( about a teaspoon)

How to?

1- Line  the bottom of an oven dish with greaseproof paper.

2- Place the filets on the paper and sprinkle  mixed herbs on top  with olive oil and cooking salt.



3- Add some more greaseproof paper on top to wrap the filets


4- Bake the filets starting with a cold oven up to 160°C ( 320°F) for 25 minutes.

5- Serve as soon as they are baked ( check using the tip of a knife) and add some boiled potatoes, mixed salad and a slice of lemon as accompaniment.
